Method
- Trim the base, clean the mushroom, and tear into evenly sized pieces about 3 cm across. Pat surfaces dry.
- Warm a large skillet over medium-high heat. Add oil and mushrooms in one layer; work in batches if necessary.
- Cook for 5–7 minutes on the first side, allowing released moisture to evaporate. Turn and cook another 4–6 minutes until browned and cooked through. Adjust heat if edges scorch before centers soften.
- Lower heat, add garlic, and stir for 30–60 seconds. Finish with salt, lemon, and parsley. Serve promptly.
Cook’s note
If the pan fills with liquid, wait for it to evaporate instead of adding more oil. Timing varies with mushroom moisture and pan size.
