Why fresh stays local
Fresh specialty mushrooms are delicate and mostly water. Long shipping routes add packaging, cost, and uncertainty. Keeping them on Oʻahu lets us shorten the time from harvest to skillet and respond directly to feedback from cooks.
Planned varieties
Lion’s mane is the lead variety, with oyster and chestnut mushrooms as possible later additions after cultivation trials. Availability will come in harvest windows rather than a promise that every variety is always stocked.
Pickup and chef orders
Pickup details will be shared privately with confirmed customers when the program opens. Restaurants and private chefs can ask about trial quantities now, but no standing supply is guaranteed until grow data supports it.
